
Baking and Warm Drinks
Are you itching to bake some goods and sip some warm drinks? I can not believe it is that time of year, but here it is! First on my list, was to whip up some healthy Pumpkin Chocolate Chip Muffins with the sprouted whole wheat flour I have on hand. Pumpkin has to be one of my favorite “healthy” additions to baked goods! I love the moisture it adds to recipes. What is your favorite added ingredient?
I buy Organic Sprouted Whole Wheat Flour in bulk from a locally owned grocery store. Do you have any health food or bulk food stores in your area? If you check around your area, you too may be surprised to find the flour near you as well! I found it for about $2/pound, which is a great deal!

Bake Believe
The new, No Sugar Added Bake Believe Dark Chocolate Chocolate Chips, are my favorite low-carb product from the store! Not every Walmart around me has them, but I can count on them at one of my local locations. The flavors Bake Believe carry are dark, white, semi sweet and milk chocolate. I believe these would be a personal choice item on the THM plan. I have to admit, I have a very hard time keeping these yummy chips around, I love popping a few in my mouth about every day. They are just SO good! I love how they melt as well. If I need them for a topping or drizzle–they turn out perfectly! You can see them here.

Pumpkin Chocolate Chip Muffins
Equipment
- Mixing Bowl
- Wisk
- Cupcake Wrappers
- Muffin Tin
- Oven
Ingredients
- 3 Tbsp Trim Healthy Mama Super Sweet or 3/4 to 1 cup Gentle Sweet
- 1/4 Cup Coconut Oil
- 2 large Eggs
- 3/4 Cup Pumpkin Canned
- 1/4 Cup Water
- 1 1/4 Cup Sprouted Whole Wheat Flour
- 3/4 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Cloves Ground
- 1/2 tsp Cinnamon
- 1/4 tsp Mineral Salt
- 1/4 tsp Nutmeg Ground
- 1/2 Cup Sugar Free Dark Chocolate Chocolate Chips Bake Believe
Instructions
- Heat oven to 400 degrees.
- In medium bowl, wisk together sweetener, melted oil, eggs and pumpkin and water.
- Add dry ingredients and stir until combined. Add chocolate chips.
- Put cupcake wrappers in muffin tins. Scoop batter into wrappers until 3/4 full.
- Bake at 400 degrees for 20-25 minutes.
