Have you noticed a lack of frozen berries in the grocery aisle lastly? I don’t know about you, but here in Kansas, we have had little to choose from! Frozen berries for making a homemade smoothie, etc. must be a hot item! It’s been so muggy here, hopefully many are making good use of their blenders! I was able to purchase a VERY large 64 ounce of frozen strawberries last week. So making some new smoothie recipes was a must!
We haven’t done much baking in the last few weeks….so hot here in Kansas. Finally, I made a batch of cookies, since the kids were back to school this week! So–I took advantage of the hot oven and tried out a new recipe! Peanut Butter Bars have been a favorite of mine for years, but I needed to “THMify” them! This recipe is adapted from my husband’s Aunt Darla’s Peanut Butter Bars. As soon as I saw a sugar-free version of sweetened condensed milk, I knew I needed to try to make a version of these sweet treats!
My 4 year-old daughter ran up to me today and said, “Mommy, you’re famous!” I replied, “Why am I famous?” “You found my critter bunny when you were cleaning the toy room!” I thought it was so cute that she thought I was famous! I am deep cleaning the toy room this week as 4 of our kiddos are at camp, because my 6 month old is beginning to roll, scoot, and make his way across the floor…..no more little tiny toys in the toy room!
It’s rhubarb season here in Kansas, so I have some fresh rhubarb on hand. I had the thought, why not try a sprouted whole wheat flour rhubarb sugar-free dessert? Here is a sneak peak at the rhubarb I freshly picked from my garden.
If you are like me, you needed a sweet treat to munch, 20 minutes ago! I have a super-easy, budget-friendly treat that’s quick to whip up! These awesome sugar-free desserts remind me of a peanut butter cheesecake! YUM! I have made these so many times! My mom even surprises me with them, when she knows I am coming over! I love you mom!
